Big shout out to Disney Food Blog for pointing us here. From the moment we walked up bourbon bar in sight, smoker smell in the air we knew we were in for something special. The Polite Pig at Disney Springs has serious hype. So does it deliver?
Short answer: absolutely yes. Wait in the line. It is worth it.

- Pork Belly Taco The star of the show. Seasoned perfectly with fresh, ideal toppings. This one alone justifies the trip.
- Smoked Chicken Taco A solid runner-up. Fresh, creamy, and well balanced.
- Brisket Taco Here’s our hot take: the brisket here is some of the best we’ve ever tried anywhere. And that’s exactly why the taco is a mistake. Putting this brisket in a taco actually masks the flavor. Skip the taco. Order the brisket on its own. Trust us on this one.

The Hop Salt Pretzel is exactly what you want crispy and warm on the outside, soft in the center, perfectly salted. The beer cheese dip has a strong brew flavor that beer lovers will appreciate, but the mustard was the real MVP and paired with everything beautifully.
The Mac & Cheese served with the brisket was a genuine standout. Topped with crunchy breadcrumbs that reminded us of fish finger breading. Sounds odd. Tastes like perfection.

- The Bourbon Brownie Being completely slept on and we refuse to stay quiet about it. Rich, soft, slightly gooey with a subtle bourbon finish and smooth dark chocolate. Our search for a worthy brownie is officially over.
- The Giant Cookie Everyone raves about this one. We found it to be honestly a bit meh. Good, but nowhere near the legendary status it’s been given. The brownie beats it every time.
